Ingredients:

  • Mixed salad greens (such as spinach, arugula, and romaine lettuce)
  • European canned peaches (drained and sliced)
  • Red onion (thinly sliced)
  • Cherry tomatoes (halved)
  • Feta cheese (crumbled)
  • Walnuts or almonds (toasted and chopped)
  • Balsamic vinaigrette dressing

Instructions:

 

  1. Prepare the Salad Greens: Wash and dry the mixed salad greens thoroughly. Tear larger leaves into bite-sized pieces if necessary and place them in a large salad bowl.

  2. Add the Peaches: Take the drained and sliced European canned peaches and gently add them to the salad greens.

  3. Include Additional Ingredients: Scatter the thinly sliced red onion, halved cherry tomatoes, crumbled feta cheese, and toasted chopped nuts over the salad greens and peaches.

  4. Make the Dressing: Prepare a simple balsamic vinaigrette dressing by mixing balsamic vinegar, olive oil, a pinch of salt, and freshly ground black pepper in a small bowl. Whisk until well combined.

  5. Toss and Serve: Drizzle the balsamic vinaigrette dressing over the salad ingredients in the bowl. Using salad tongs or two large spoons, gently toss the salad until all the ingredients are evenly coated with the dressing.

  6. Serve: Once the salad is nicely tossed, transfer it to serving plates or bowls. You can garnish with additional crumbled feta cheese or chopped nuts if desired.
